5 Quick and Easy Picnic Recipes

Feel like a picnic? So do we! It’s warm and you want to sit in the park with your friends and share a few snacks. But which food and drink is best for a picnic? What can be prepared quickly and stored in a picnic basket? We’ve been busy in the kitchen and have put together our favourite picnic recipes for this summer. In this article we’ll show you how to prepare a whole menu with a few ingredients in very little time. Snack on some fresh tomato mozzarella sticks, serve pesto bread as a main course in the park, dip your crisps or veggies in a delicious red pepper-feta dip and enjoy strawberry waffle skewers for dessert. A refreshing glass of homemade berry iced tea rounds everything off nicely. Have fun on your next picnic!

Tomato Mozzarella Sticks

For 10 skewers you need:
  • 10 long cherry tomatoes
  • 20 mozzarella pearls
  • Basil leaves
  • 10 long skewers
First drain the mozzarella and wash the tomatoes. Remove the basil leaves from the stem and wash them. Next cut the tomatoes on the diagonal and put the halves together in a heart shape. Then place all the ingredients on the skewers in the following order: basil, mozzarella, tomato, mozzarella, basil. You can change the order of the ingredients as you wish. Not a fan of tomatoes? I recommend adding strawberries to your skewers, which you can also cut into a heart shape. And just like that it’s ready!

Hasselback Pesto Bread

For 2 servings you need:
  • 2 bread rolls
  • 1 mozzarella
  • Basil pesto
  • Some oil
  • Basil
Preheat your oven to 180°C for a convection oven or 160°C for a fan oven (350 F/320 F fan). Cut slits into the bread rolls on an angle and at equal intervals. Don’t cut all the way through the rolls. A baguette is also great for this recipe. Spread some pesto in each slit. Cut the mozzarella into slices and place one slice into each slit. Finally brush the bread rolls with a little olive oil and bake in the oven for 10 minutes until the cheese is melted. You can garnish the finished rolls with some extra basil. Bon appetit!

The Perfect Picnic Dip with Feta and Red Pepper

The ingredients:
  • 200 g feta cheese
  • 200 g cream cheese
  • 1 red pepper
  • 1 tsp. herbes de Provence
  • 1/2 tsp. oregano
  • 1 tbsp. olive oil
  • 3 cloves of garlic (adjust to taste)
  • Salt and pepper
First cut the pepper and creamy feta into small cubes. Using a food processor or stick blender, puree the cubes together with the cream cheese and olive oil until you get a creamy mixture. Crush in as much garlic as you like and add the herbs to the dip. To finish it all off, season with a little salt and pepper and you’re ready to dip.

Strawberry, Waffle & Chocolate Skewers

For 10 skewers you need:
  • 20 strawberries
  • 4 fresh waffles
  • Nutella
  • 10 long skewers
First wash the strawberries and leave them to dry off. Then spread the waffle with nutella or another spread of your choice and fold it together. Depending on the size of the waffle, cut it to a smaller size. Then skewer 2 strawberries with a piece of waffle between them. If you have shorter or longer skewers, you can of course change the number of strawberries or waffle pieces. In no time at all, this sweet picnic snack is prepared and ready to go. Have fun trying it out!

Refreshing Berry Iced Tea

The ingredients for 3 servings:
  • 600 ml water
  • 3 sachets of fruity herbal tea
  • 9 tbsp. of blackcurrant cordial
  • 4-6 tbsp. lemon juice
  • Fresh mint leaves
  • Your choice of berries
  • Ice cubes
Let's get started! Place the tea bags in boiling water and let the tea steep for 6-8 minutes or as indicated on the packet instructions. Then remove the tea bags and place the drink in the fridge for approximately one hour. Next mix the iced tea with the blackcurrant cordial and lemon juice. Serve the finished drink in a glass with ice cubes, berries and fresh mint. The perfect outdoor refreshment on hot days!
